Broiled Perch

1.5kg perch
oil
Broil the perch whole or in fillets as desired.
When broiled whole the fish need not be scaled just cleaned.
Brush with oil and broil for 8 to 10 minutes over a grill in a rack over open fire or in hot ungreased cast iron skillet.
Remove the skin and serve with salt and butter flavoured with lemon juice.
Whitefish whiting herring and trout may be prepared in the same way.
