Cumquat Marmelade

1kg Cumquats
1kg white sugar
1 liter water
30ml lemon juice
Slice the cumquats in fine slithers and keep the pips. Put the cumquats in a stainless steel pot and cover with the water. Put the pips in a muslin cloth and tie it with a pièce of kitchen string before adding it to the water and cumquats. Let it stand overnight.
Bring everything to the boil and simmer for about 30 minutes or until the fruit are soft.
Take out the muslin bag and squeeze out all the juices into the pot.
Add the lemon juice and sugar. Stir until the sugar has dissolved.
Cook until the jam start to thicken or reached 105C.
Pour the jam into sterilized bottles.
