A dish made with cleaned fresh anchovies with heads and
tails o ff and backbone removed leaving two fillets joined kipper-style.
Two anchovies are put together like a sandwich, skin side out,
with a filling of chopped herbs, garlic, pine nuts or walnuts and olive oil.
The ‘sandwich’ is sprinkled with breadcrumbs and olive oil and baked for 10 minutes in a 220°C oven.
