Ingredients

½ lt TOP Vinegar white

250 gr dark crystalline sugar

1 stalk of rosemary

Method

We put all the ingredients into a saucepan and we boil them for approximately an hour, until the 2/3 of the liquid has evaporates. As the sauce is condensed, it becomes sticky syrup. We withdraw the saucepan from the heat on time not to burn our mixture, we leave the mixture to cool and we serve in a honey utensil.

Optionally, we can add pepper grains.

By the chef

In Italian, “un cucchiaio de Aceto dolce” means 1 teaspoon of “sweet vinegar”. Our recipe refers to a vinegar mixture for ideal use in savory recipes, mainly spring or summer ones, as a base for fish. By replacing the rosemary with fruits, you can obtain, of course, vinegar that is suitable for sweeter dishes.
