Tsire spice powder

This simple spice mixture is used as a coating for kebabs throughtout West Africa. The raw meat is dipped first in oil or beaten egg an then in the spice mixture. A little of the mixture is scattered over the cooked meat before serving.

Recipe for Tsire spice powder

Ingredients:

1/2 cup salted peanuts

1 teaspoon chili powder

1/4 teaspoon ground ginger

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

1/4 teaspoon ground cinnamon

salt to taste

Preparation:

Grind the peanuts to a coarse powder in a mortar, blender or food processor, then add the ground mixed spice, chili powder and a little salt. Use at once or store in an airtight jar, away from heat or light for up to 2 months.
