KOPERPENNIE WORTEL SLAAI

(8-10 porsies)

1 kg wortels gesny

2 uie in ringe gesyn

2 soetrissies ontpit en in repe gesny

50 ml tamatiepasta

250 ml water

200 ml wit asyn

125 ml kookolie

250 ml suiker

10 ml Worcestersous

7 ml aangemaakte mostert

Sout en peper na smaak

Kook die wortels tot half gaar, sag maar nie pap nie. Gooi in vergiettes en spoel af met koue water en dreineer. Rangskik wortels, soetrissies en uie in lae in ‘n groot bak met ‘n deksel en eindig met wortels. Meng res van die bestandele, verhit tot kookpunt, roer aanhoudend en kook vir 2 min. Gooi warm oor slaai en laat met behulp van ‘n mes in die middel en teen die kante inloop. Laat afkoel. Sit deksel op en marineer vir

2 dae in die koelkas voor gebruik.

Ek het dit ook warm gebottel.
