Genoeg vir 6 mense

Bereiding: 20 minute

Gaarmaaktyd: 1½ uur

1 varkboud, sowat 2 kg, ontbeen, maar behou die swoerd (“rind”)

growwe sout

sout en vars gemaalde swartpeper

VULSEL

250 ml (1 k) witbroodkrummels

30 ml (2 e) salieblare, gekap

30 ml (2 e) tiemieblaartjies

60 ml (¼ k) bloukaas, gekrummel

125 g ontpitte pruimedante

60 ml (¼ k) gekapte neute

AFRONDING

3 rooi uie, geskil en in wiggies gesny

6 groen appels, ontkern, maar nie geskil nie, in kwarte gesny

1 bottel (340 ml) sider

7 ml (1½ t) mosterdpoeier

ekstra takkies tiemie en salie

skeppie jogurt

Voorverhit die oond tot 160 °C.

Plaas die boud op ’n oppervlak met die vleiskant na onder en smeer die swoerd goed in met growwe sout.
