Bavarian Cream (Crème Bavaroise)

Bavarian Cream also known as Bavaroise is a light fluffy cream. It is often blended with fruit purées or chocolate.
Ingredients Required: Bavairan Cream
1. Whipped Whipping Cream 10 ounces
2. Vanilla Pastry Cream 10 ounces
3. Un-flavored Gelatin 1 - packet (1/4 ounce)
4. Cool Water 1 ounce
Process Instructions
1. Beat Beat chilled Pastry Cream until smooth. Whip the whipping cream.
2. Add In a separate container bloom the Gelatin with the cool water.
3. Add Warm the gelatin in the microwave for 10 seconds or until clear and add to Pastry Cream, mix smooth.
4. Fold Using a rubber spatula fold Whipped Cream into Pastry Cream mixture. Fold until creamy and smooth.
Variations: Use promptly.
Add any additional flavor (Vanilla, Ganache, Kirschwasser or Triple Sec) in stage #1 with Pastry Cream.
