Cheddar and potato cake

Ingredients
1kg Jersey Royals, scrubbed (potatoes)
20g butter
1 onion, finely sliced
200g mature Cheddar cheese, grated
Salt and freshly ground black pepper
Salad leaves, to serve
Method
Cook the Jersey Royals in lightly salted boiling water until almost tender –for about 10-15 minutes. Drain well and cool.
Meanwhile, preheat the oven to 180°C, fan oven 160°C, Gas Mark 4. Use a little butter to grease a 20cm (8 inch) loose-based cake tin.
Melt the rest of the butter in a frying pan and cook the onion for about 4-5 minutes, until softened. Put them to one side while you slice the Jersey Royals thinly.
Arrange a layer of sliced potatoes, onion and Cheddar in the cake tin, season with black pepper and repeat the layers. Bake for 30 minutes, until golden brown. Cool for 10-15 minutes, then turn out carefully and serve in wedges with salad leaves.
Top tip: Add chopped fresh chives or parsley to the layers if you like.
