Ham and cheese crumpets

Ingredients
A few slices of smoked ham
100g/3½oz Gruyère or Cheddar
4 crumpets
Butter
Dijon Mustard
Salt and pepper
Method
Lay a few slices of smoked ham flat on a plate and top the cheese, thinly sliced.
Microwave on medium–low for 2–3 minutes, until the cheese has melted.
Meanwhile, toast 4 crumpets. Spread the crumpets with butter and some Dijon mustard.
Top with the ham and melted cheese. Season with pepper and a little salt if necessary.
