Red cabbage with broccoli and bacon.jpg

Ingredients

3 x 220g long-stem broccoli, sliced in half

200g bacon lardons

1 tbsp olive oil

1 garlic clove, crushed

1 tsp clear honey

454g Red Cabbage, drained and rinsed

50g dried cranberries

20g butter

Juice of ½ lemon

Ground black pepper

Method

Blanch the broccoli in a pan or bowl of boiling water for 4 mins. Drain and refresh with cold water.

In a large saucepan, fry the bacon lardons in the oil for 4-5 mins, until just crispy.

Add the garlic and honey, and mix through, then stir in the broccoli, red cabbage and cranberries. Cook for 2 mins, until everything is piping hot. Add the butter.

Transfer to a serving dish, squeeze over the lemon juice. Serve.
