Salt cod alla Bolognese

The cod bolognese is an ancient dish easy implementation and successful. We divide the cod into pieces and put them in a pan with chopped garlic and parsley and cuoceremo high heat for a few minutes on each side. At the end we will serve them with their cooking liquid and lemon juice.
Ingredients
1 kg salt cod
1 dl Extra virgin olive oil
2 cloves garlic
1 bunch chopped parsley
1 head Lemon
ground pepper to taste
30 g butter
Preparation
Step 1
Cleanse and cut in the cod pieces, wash and dry them.
Step 2
Grease a pan with oil and line up the pieces of cod, sprinkle with the chopped garlic and parsley and season with a pinch of pepper, with a splash of oil and butter divided into pieces.
Step 3
Put the pan on the stove over high heat, cook for 6 minutes on each side, risvoltando the pieces very carefully because, not being floured, they can crumble easily.
Step 4
After cooking, arrange on a serving platter, cover with their cooking juices, sprinkle with lemon juice and serve the pieces still hot.
