Apple rice salad

Ingredients
100g (31/2oz) long grainwild rice
2 shallots, diced
sweet pointed Romano pepper, deseeded and very finely sliced
1 celery stick, finely diced
1 Pink Lady apple, cored and diced
1 tomato, deseeded and finely diced
15g ( oz) raisins
2 tbsp chopped fresh coriander
1 tsp mild chilli powder
2 tsp chipotle paste
2 tbsp 0 per cent Greek yogurt
Method
Bring a saucepan of water to the boil and add the rice. Stir, then bring back to the boil. Gently simmer according to pack instructions until cooked.
Drain, then rinse in cold water. Drain again and put into a large bowl.
Add all remaining ingredients and gently combine. Season to taste, then serve.
