Gesoute bottertoffies

Dié toffies is ’n verleidelike kombinasie van soet en sout.

Jy het nodig:

400g gesoute botter

250ml room

7g Maldon-seesout

500g witsuiker

75g glukose

’n lekkergoed-termometer

Só maak ’n mens:

1. Verhit die room, botter en sout saam tot kookpunt in ’n middelgroot kastrol.

2. Plaas die suiker en glukose saam in ’n ander kastrol en verhit tot 145°C.

3. Roer die glukosemengsel by die roommengsel en verhit tot 120°C, roer aanhoudend. Dit kan sowat 20 minute neem vir die mengsel om dié temperatuur te bereik – wees geduldig!

4. Giet die mengsel in ’n voorbereide reghoekige bakkie wat met olie gesmeer is. Laat afkoel.

5. Keer die bottertoffies uit en sny in blokkies. Sprinkel ’n bietjie ekstra Maldon-sout oor indien verkies. Jy kan hulle individueel in gekleurde foelie of waspapier toedraai. Bêre op ’n koel, droë plek.
