Jy benodig:

2,25kg Roma-tamaties

600ml rooiwynasyn

350g suiker

1 gemmerwortel, dun gesny

1 kaneelstokkie

150g biltong

3 uie, gesny

6 g sout

Maak só:

1. Blansjeer die tamaties en skil dit af. Sny dit op. Braai die uie net liggies en voeg die gemmer by.

2. Braai liggies vir nog 2 tot 3 minute. Voeg nou die tamaties, suiker, kaneel, sout en asyn by en smoor vir 15 minute. Terwyl dit kook, bak die gekerfde biltong in die oond teen 120 tot 140°C om dit ’n bietjie uit te droog en ’n bros tekstuur te gee, nie te kook nie.

3. Sif die tamatiemengsel en sit die vloeistof terug op die stoof. Reduseer vir sowat 10 minute of tot ’n stroperige tekstuur vorm.

4. Voeg die tamatie-gemmermengsel weer by die sous. Kap die biltong in stukkies en meng by.

Kook vir nog 10 minute
