Notes from the Chef
Many years ago in one of my restaurants, we served our guests a basket of warm “bread.” What we served was really leftover pizza dough with some oil, grated cheese, garlic and herbs.
I thought that since I now make my pizza with low-carb pita bread, why not recreate this bread basket treat using the pita?
Ingredients
1 tsp olive oil
1/4 tsp minced garlic
1/4 tsp dried oregano
1/4 tsp dried basil
1/4 tsp dried parsley flakes
1 low-carb, whole-wheat pita*
2 tsp grated cheese (Parmesan, mozzarella or Romano)
*Chef's recommendation: Joseph's Flax, Oat Bran and Whole Wheat Flour Pita Bread
Preparation
Preheat oven to 400 F.
Combine oil, garlic and herbs. Using a pastry brush, coat the pita bread. Sprinkle with grated cheese.
Cut the bread into eight triangles. Place on a baking sheet and bake in the oven for 3-4 minutes or until the cheese starts to color. (Remember: You are NOT making pita chips but soft, chewy bread.) Serve immediately. Great with soups and salads.
