Chunky Green Bean, Potato, Onion & Yogurt Soup

Ingredients:

400g green beans

6 medium potatoes

3 medium onions

100g margarine / butter

1/2 cup flour

500ml milk

1 cup yogurt

1 teaspoon salt

blackpepper to taste

1/2 teaspoon nutmeg

Method:

Boil the beans, potato and onion in 1 litre water until soft.

Break the vegtables up into chunky, bite-size chunks.

The soup should not be completely smooth.

Melt the butter in a saucepan.

Add the flour.

Mix the milk and yogurt.

Add a little at a time to the four and butter mixture.

Stir with a wire wisk the whole time to prevent lumbs.

When done, mix the yogurt sauce with the vegetables and simmer for 10 minutes.

Add the nutmeg and seasoning.

Serve with finger croutons and yogurt.
