Onion burger

My favourite companion for beef is onion. I can never get enough of onions when they are slowly sautéed; raw, on the other hand, I like just a hint of. This recipe lets you go as crazy as you like with the onion, as it’s all cooked. I love the crispness, the steam and the sweetness. This burger is cooked in the style of an Oklahoma onion burger or even a New Jersey slider. Cooking the white onions on the patties imparts great flavour.
INGREDIENTS
2 white onions, thinly sliced on a mandoline
75g self-raising flour
2 tablespoons panko crumbs
salt
oil, for deep-frying
1 brown onion, cut into 1 cm-thick rings
700g chuck steak, minced
1 tablespoon olive oil
sharp cheddar, sliced, to serve (optional)
4 burger buns
butter, to serve
favourite mustard, to serve
gherkins, sliced, to serve
METHOD
In a bowl, cover the white onion with water and set aside for 20 minutes. Drain.
Combine the flour, panko crumbs, a pinch of salt and 185 ml iced water in a bowl and whisk until smooth. If it’s very thick add a little water, 1 teaspoon at a time. If it’s very thin, add a little more flour.
Heat the oil in a deep-fryer or large heavy-based saucepan to 180°C, or until a cube of bread dropped into the oil turns golden brown in 15 seconds. Dredge the brown onion rings in the batter and fry for 1 minute, or until crunchy. Drain on paper towel.
Preheat the oven to 180°C.
Divide the minced meat into 4 equal-sized portions. With your hands, shape the portions into patties.
Heat the olive oil in a frying pan or chargrill pan until it’s really hot. Salt the patties on one side and cook, salt side down. Top each patty with a small handful of the white onions and sprinkle with a little salt. Grill the patties for 2–3 minutes, or until there is a good crust. Flip and cook for 2–3 minutes, or until the onions are nicely charred. If adding cheese, melt some on the patties now.
Meanwhile, toast the buns then slice and spread with butter and mustard. Add some gherkin slices, a patty and a couple of brown onion rings. Pop on the bun tops and serve.
