Tomato, buffalo mozzarella and basil pizza

When I was in charge of the toppings on family pizza night, I was always trying to come up with something different and complicated. Though this is one of the simplest pizza combinations there is, it’s also one of the best – and it's still one of my all-time favourites.
INGREDIENTS
1 Pizza base
extra-virgin olive oil, for drizzling
5 large roma tomatoes, thinly sliced
3 buffalo mozzarella balls
100g basil, leaves picked
sea salt flakes
METHOD
Preheat the oven to 220°C.
Place the pizza base on a baking tray or pizza stone. Drizzle some olive oil over the top of the base. Add the tomato slices, and break up some mozzarella and scatter over the tomato. Top with basil leaves, season with sea salt and freshly ground black pepper, and drizzle with more olive oil.
Bake for 15 minutes or until the pizza base is crisp.
