Lime delicious

INGREDIENTS
110g caster sugar
50g butter, softened plus additional melted, for greasing
3 finely grated limes, juiced and zested
2 large eggs, separated
3 tablespoons self-raising flour
250ml milk
icing sugar, for dusting
cream or ice cream, to serve
METHOD
Preheat the oven to 180°C. Lightly grease four 1 cup ovenproof ramekins or one 4 cup ovenproof dish.
Cream the sugar, softened butter and lime zest together in a medium-sized bowl, until pale and creamy. Add the egg yolks, one at a time, mixing to combine. Add the lime juice, flour and milk, a little at a time, and stir to combine.
In a separate bowl, whisk the egg whites, using an electric mixer with a whisk attachment, until soft peaks form. Stir 1 large spoonful of egg whites into the batter. Gently fold in the remaining egg whites.
Divide the mixture evenly among the prepared ramekins or spoon it into the dish. Place the ramekins or dish in a deep baking tray and pour enough boiling water into the tray to come halfway up the sides.
Bake in the oven for 25–30 minutes for the ramekins, 40–45 minutes for the dish, or until puffed and golden.
Dust with icing sugar and serve hot with cream or ice cream.
