This is a nice, simple breakfast that ticks all the right boxes to start your day off well: complex carbohydrates, vitamins and minerals, low GI… and it looks rather nice too!
The quantities are variable depending on the size of the serving glass you’re using.
You can make it as big or as small as you like.
INGREDIENTS
fresh berries
porridge oats
pumpkin seeds
live probiotic yoghurt
ground cinnamon, for sprinkling (optional)
honey, for drizzling (optional)
METHOD
Find a nice-sized glass – a large tumbler, for example.
Begin with a thin layer of fresh berries. Top this with a thin layer of porridge oats, then a thin layer of pumpkin seeds, then finally a layer of yoghurt. Repeat this process as many times as is necessary to fill your vessel of choice. You can add a little pinch of cinnamon and a drizzle of honey at the end to jazz things up a bit.
GOOD FOR
Heart & circulation: High cholesterol
Digestive system: Haemorrhoids
