Sriracha mayo

I don’t bother making my own mayonnaise here because all subtlety goes out the window as soon as you add the Sriracha, or hot chilli sauce. This is so easy to make and you can customise it to your taste, so if you like more of a chilli kick, simply add more Sriracha. A word of warning: once you have a jar of this in your fridge you just might find yourself using it on everything – from a cheese sandwich to your Sunday roast.
INGREDIENTS
2 tablespoons sriracha or similar chilli sauce
10 tablespoons good-quality mayonnaise
1/2 lime, zested and juiced
pinch sea salt
pinch ground white pepper
METHOD
Sterilise a small jar by putting it through a hot dishwasher cycle or washing it in hot, soapy water, rinsing well and drying it in a hot oven for 10 minutes.
Simply combine all the ingredients, season to your liking and store in the sterilised jar or a squeezy plastic bottle in the fridge.
