Super green kale smoothie

We all have days when we wake up feeling a bit jaded, regretful about that final ‘small glass’ from the night before, or just plain ‘meh, it’s Monday’. Working in food involves eating out a fair bit, so I’ve been known to harbour the odd ‘food hangover’. When I was living in Vancouver I got into kale smoothies, because they were everywhere. They make me feel better. Kale is packed full of good things, from antioxidants and calcium, to vitamin C and beta carotene, and is a great way to give yourself a morning boost, which, not being a morning person at all, I desperately need. If you can’t find coconut water (also a brilliant source of good things like potassium and minerals), use pineapple or orange juice instead.
INGREDIENTS
100g kale, washed, stems removed and leaves patted dry
thumb-sized piece fresh ginger, peeled and grated
1 ripe banana, peeled
600ml coconut water
2 teaspoons runny honey
squeeze lemon juice
SPECIAL EQUIPMENT
blender or food processor
METHOD
Put the kale, ginger and banana in a blender or food processor and blend to a pulp, then add the coconut water, honey and lemon juice. Blend thoroughly and drink straight away.
