Cowboys’ and girls’ fastest pudding in the west

Years ago when asked to book a very important client lunch by my very important black-rimmed spectacle wearing ad-man boss, I did what any self-respecting 22-year-old girl with a cheap suit and next to no salary might do. I consulted the tome that was the Square Meal directory and chose J Sheekey. This is what I ordered for pudding. It’s delicious, it’s sweet, it’s fruity, it’s a little bit like ice cream, it has a great bite to it and best of all for any parent, it’s quick and thrifty. Not sure whether cowboys and girls truly carried a freezer but for poetic purposes, they did.
INGREDIENTS
50g frozen berries, straight from the freezer
25g double cream
25g white chocolate, broken into small pieces
METHOD
Pop the berries onto the serving plate. Over a very low heat, gently heat the double cream and chocolate in a small saucepan until the chocolate has melted. Be careful not to overheat as white chocolate has a habit of burning very easily. Use a metal spoon to stir the mixture and, when completely combined, pour over the frozen berries. From no pudding in sight to chocolate covered faces in just a matter of minutes!
IDEAS FOR DOUBLE CREAM
Keep the kids busy making butter by simply shaking the double cream in a clean jam jar until it separates into butter and buttermilk – add salt to extend the life of the butter or simply freeze it and use the buttermilk in pizza dough. Or whisk to soft peaks and freeze in ice cube trays, ready for adding to curries, risottos and pasta sauces. Or whisk to medium peaks then fold in a little orange zest and use to sandwich shortbread biscuits, dusted with caster sugar and served with slices of orange. Or, if you’re feeling a little glum, then make an adult’s version of this pudding by adding a dash of Baileys or limoncello.
