Nanny’s Yorkshire all-sorts

My mum was the one who introduced my now-addicted youngest son to Yorkshire puddings. It’s been a bit of a nightmare getting this recipe out of her as she does everything by eye. Well, no longer! I determinedly watched her with a pen, paper and a set of digital scales. I make mine in silicone cupcake cases as they never stick and need very little lubrication in the form of lard, dripping or oil. They are easy to freeze and are received especially well by children who are addicted to the crunch of rice cakes and breadsticks. Let them choose their own nutritious filling to add to the crunchy receptacle, and everyone’s happy.
INGREDIENTS
100g plain flour
black pepper, (optional)
2 large eggs
175ml whole milk
lard
or groundnut oil
or beef dripping
METHOD
Preheat the oven to 220°C and put a teaspoon of lard, oil or dripping into each of the 12 silicone cupcake cases or metal cupcake tray holes. Place the cases on a baking tray for ease. Transfer the tray to the top shelf of the oven.
Meanwhile, make the batter. Sift the flour into a large bowl, add a pinch of black pepper and make a well in the middle. Crack the eggs into the well and use a whisk (my mum uses a fork, but I just can’t get the hang of it) to gradually whisk the flour into the egg until it’s very smooth and thick. Gradually add the milk a little at a time, whisking after each addition. Pour the smooth batter into a jug and refrigerate for a minimum of 10 minutes.
When the fat is spitting away and extremely hot – and I mean really hot, for these will not rise if the fat isn’t angrily spitting and threatening to scald you – carefully pour the cold batter into each case until half to three-quarters full. Immediately put the tray of cases straight back into the oven, on the top shelf. Leave to rise, with no peeking, for 20–25 minutes or until well risen and golden brown. Take out of the oven and remove from the cases straight away to stop them from soaking up any more of the fat. Serve filled with meat, vegetables, gravy or whatever your son or daughter fancies. Just save one to have with banana and golden syrup for pudding.
