Parmesan wafers with celeriac remoulade and roast beef

INGREDIENTS
250g shredded parmesan cheese
1 celeriac
2 teaspoons dijon mustard
2 tablespoons lemon juice
3-5 tablespoons pouring cream
8 slices rare roast beef, halved
snipped chives, for garnish
METHOD
Preheat the oven to 180°C. Line 2 baking trays with baking paper. Place 1-tablespoon amounts of parmesan on the trays, leaving 5 cm between each to allow for spreading. Bake for 8–10 minutes or until golden. Leave to cool on the trays.
Peel the celeriac and coarsely grate into a bowl. Add the mustard, lemon juice and enough cream to bring the mixture together. Season with salt and pepper.
To serve, top each wafer with a spoonful of the remoulade, half a slice of roast beef and garnish with the chives.
