Spotty dog pancakes

Super thin pancakes, the ones you inhale in France, have never been my thing. I don’t know if it’s the dainty thinness but they feel insubstantial to me. I know I’m in the minority. These American-style relations are much more me. Smaller but fatter and dotted with sultanas, to me they’re deeply satisfying. They’re great for breakfast and taste delicious with a little orange or lemon zest added too if you fancy it.
INGREDIENTS
130g plain flour
1/2 teaspoon bicarbonate of soda
1 teaspoon baking powder
1 large egg
240ml whole milk, with a dash of lemon juice added
10g caster sugar
15g butter, melted
100g sultanas
groundnut or sunflower oil, for frying
METHOD
Place the flour in a large bowl and mix in the bicarbonate of soda and baking powder. In another bowl and using a whisk, beat the egg until frothy. Add the milk and lemon juice mixture, sugar and melted butter to the egg, whisk again and pour over the dry ingredients. Using a metal spoon, mix well until no lumps remain. Add the sultanas and stir through.
Heat 1 tablespoon of oil in a large frying pan over a medium heat. Once the oil starts to sizzle add a ladle of the pancake mixture so that it spreads to about 10 cm wide. Once it starts to look firm, between 40 seconds and 2 minutes later (this is dependent on the ferocity of the heat), use a fish slice to flip the pancake over. It should be lightly browned on the flipped side – if it’s very dark turn the heat down. Fry on the other side for 40 seconds to 1½ minutes, again depending on the heat. Remove from the pan and wrap in a clean tea towel to keep them warm whilst you make the others. Repeat with the remaining batter.
If you can’t eat them all then just place them between layers of greaseproof paper to stop them from sticking and keep them either in the fridge or freezer. These are a real treat when reheated in the microwave for breakfast. Don’t save the batter uncooked, as there are too many raising agents added.
Serve with fresh fruit, ice cream, maple syrup or just as they are, as spotty little dogs.
