Apple Pie with Bacon Lattice

Pastry for a single crust pie
6 apples, peeled and thinly sliced
2/3 cup sugar
2 Tbsp. flour
2 tsp. cinnamon
pinch salt
8-10 slices bacon
Preheat the oven to 350F. Line a 9″ pie plate with rolled-out dough; trim and crimp the edges.
Peel and slice the apples into a large bowl. In a small bowl, stir together the sugar, flour, cinnamon and salt; sprinkle over the apples and toss to coat. Pile the apples into the crust and spread them out evenly.
Place 4 slices of bacon evenly across the apples. Weave the other 4 pieces over and under the first 4, tucking any ends in alongside the apples. Bake for an hour, until the apples are tender, the crust is golden and the bacon is crisp. Let the pie set for at least 30 minutes before slicing. Serves 8.
