4 servings
Ingredients:
inspired by Manu's Christmas Menu
8 chicken Drumsticks
2 Garlic cloves, crushed
16 Bacon slices
2 Tbs. Olive oil + 1 for coating
3 Rosemary Springs
5 Tbs. Marsala wine
Salt and Pepper to taste
Directions:
Preheat the oven on 410 degrees Fahrenheit (or depending on your oven)
Take the skin off the chicken drumsticks and make few small slits in the meat so the meat can cook easier.
Season it with salt and pepper, and rub on all the drumsticks bit of olive oil, then roll the bacon slices on. Since drumsticks that I had were quite large, I needed two bacon slices, but if ones that you have are smaller use only one.
In a baking dish add oil, crushed garlic then add wrapped drumsticks and sprinkle with fresh rosemary needles/leaves.
Bake for 15 minutes, then add Marsala wine put the dish back in the oven and bake until cooked through, about 25 more minutes (OR when you punch through the thickest part with meat/chicken cooking thermometer and it showing at least 165F)
enjoy!
NOTE*
This recipe would very well with any part of the chicken, and you can use prosciutto.
Marsala is a wine produced in the region surrounding the Italian city of Marsala in Sicily.
Having meat thermometer is a knead little tool that it's not expensive but it's great having it around, plus you will know that your cooked meat is safe to eat.
Just in case if you were wondering: According to the USDA, a chicken breast is considered done when an internal temperature of 165F, and leg and thighs 180F. Otherwise, potentially dangerous bacteria that is known to sicken more than 75 million people and kill about 5,000 people each year can be found in the meat.
