Fool's gold sandwich

My first taste of a Fool's Gold Loaf was during the annual Elvis Festival in Parkes, NSW — it sure was a crazy combo fit for the 'King'! The original version made by a restaurant in Denver, Colorado, consists of a single warmed, hollowed-out bread roll filled with one jar each of peanut butter and grape jelly, then topped with a pound of crispy bacon (a pound!). Don't worry, my version is a lot less life-threatening but just as tasty. This delicious sandwich will send you rocking in your blue suede shoes.

INGREDIENTS

4 bacon slices

2 crusty bread rolls

butter

peanut butter

grape jelly, blackberry or strawberry jam

maple syrup

METHOD

Fry the bacon in a non-stick frying pan over medium heat until crisp, about 5 minutes. Tip the fat from the pan. Slice the bread rolls in half horizontally and spread butter on the insides, then toast the bread using the same pan, cut side down, until golden, about 1 minute.

Spread peanut butter on one side of the bread, jam on the other, put two bacon slices in each roll and drizzle with maple syrup. Serve immediately.
