Pear, caramelised onion and gorgonzola pizza

INGREDIENTS
1/2 quantity Pizzas, unbaked
2 tablespoons olive oil, plus extra to drizzle
2 large onions, thinly sliced
1 pear
1/2 lemon
100g fresh buffalo mozzarella, thinly sliced
30g gorgonzola cheese, crumbled
sea salt flakes, to taste
handful rocket leaves
METHOD
Prepare the pizza dough as directed.
Heat the olive oil in a frying pan over a medium heat, then add the onion and sauté until soft and caramelised with a dark golden colour, stirring occasionally, about 10–15 minutes. Remove from the heat and let it cool completely. Peel and thinly slice the pear. Squeeze the lemon juice over the top and gently combine. This is to prevent the pear oxidising (turning brown).
Top the pizza dough with the mozzarella, caramelised onion, sliced pear and gorgonzola. Sprinkle with salt and drizzle with a little olive oil. Bake for 10–12 minutes, until the crust is golden and caramelised on top. Remove the pizza from the oven, rest for a few minutes then top with the rocket and drizzle with more olive oil. Slice and serve.
