PUMPKIN SOUP - Marilou Corver Mooiplaatsie Promosie

Ingredients:
45g butter
750g diced peeled pumpkin
1 large onion chopped
Finely grated rind of 1 orange
750ml chicken stock
Salt&freshly ground black pepper
15ml cornflour
1 cup milk
125 ml cream
30ml finely chopped parsley for garnish
METHOD:
1.Melt butter in large saucepan.Add pumpkin,onion and orange rind.Cook on gentle heat till onion is soft about 5minutes
2.Add stock and seasonings and bring to boil.Reduce heat and simmer gently (covered) for about 30 minutes or untill pumpkin is tender.
3.Puree the soup and return to saucepan.
4.Mix cornflour to a smooth paste with 45ml of the milk. Add this with the remaining milk to the soup.
5.Bring slowly to the boil stirring constantly .Reduce the heat and simmer for 5 minutes Check the seasoning.
6. Before serving stir in the cream and sprinkle with parsly
(Sometimes I use veggie stock or beef stock and
Add a cinnamon stick or nutmeg for more flavour
I do not always use the cornflour and milk it depends on the thickness of the puree)
