Passionfruit butter

INGREDIENTS
16 passionfruit
2 large tablespoon butter
4 eggs, lightly beaten
2 cups sugar
METHOD
Remove fruit pulp from skins and put it into a saucepan with sugar, eggs and butter. Stir mixture over fire until thick but do not let it boil. When cold, put into sterilised jars and cover.
TIP
If you don’t have a fire handy as Gran did in the 1930s, low heat on a stove top works fine as a substitute!
