Tomato sauce

INGREDIENTS
4kg tomatoes
1.8kg apples
900g onions
14g peppercorns
14g chillies
14g cloves
1.4kg brown sugar
225g salt
1.7 litres vinegar
METHOD
Roughly chop (but don’t peel) tomatoes, apples and onions. Tie peppercorns, chillies and cloves in muslin. Boil all ingredients steadily for 3 hours, then discard muslin ingredients and strain the rest through a colander.
Bottle. Can be used immediately.
