Apple shortcake

INGREDIENTS
2 1/2 cups self-raising flour
1 1/2 cups sugar
190g butter
2 eggs, lightly beaten
2 cups apples, peeled, sliced and cooked
milk, for brushing
METHOD
Sift flour into a bowl, add sugar and stir to combine. Rub in butter and then add egg to form soft dough. Press half the dough into a greased slice tin, cover with cooked apple. Roll out the rest of the dough and place on top of apple. Brush over with milk.
Bake 20-30 minutes at 180°C. Sprinkle with icing sugar and slice while hot.
