Apricot sponge

INGREDIENTS
55g butter
55g brown sugar
1 egg
55g flour
1 teaspoon baking powder
850g stewed apricots
METHOD
Cream butter and sugar, add egg and beat well. Add sifted flour and baking powder. Place hot stewed apricots into dish and pour sponge mixture over them.
Bake for 40 minutes at 200°C.
NOTE
Other fruits can be used in place of the apricots if desired.
