INGREDIENTS
2-3 sheets flaky pastry
raspberry jam
115g butter
115g sugar
2 eggs
140g flour
1 teaspoon baking powder
METHOD
Line about 20 patty tins with pastry. Put a teaspoon of jam at the bottom of each.
Mix together butter and sugar until light and fluffy, then add eggs one at a time, beating well after each addition. Fold in sifted flour and baking powder until combined.
Put a large spoonful of cake mixture on the top of jam. Place a small piece of crossed pastry on the top of cake mixture. Bake about 20 minutes at 200°C.
