Coffee cake

CAKE
INGREDIENTS
2 tablespoons strong coffee granules
85g butter
155g sugar
1 teaspoon sugar
1 teaspoon vanilla essence
3 eggs, separated
140g flour
42g cornflour
1 teaspoon ginger
3 tablespoons milk
1 teaspoon baking powder
ICING
2 cups icing sugar
2 tablespoons butter
2 tablespoons strong coffee granules
boiling water
1/2 cup slivered almonds
whipped cream, to fill
METHOD
To make the cake, dissolve coffee in a little water. Cream butter, sugar, dissolved coffee and vanilla. Beat in egg yolks one at a time, then add sifted flour, cornflour and ginger, mixing in alternately with stiffly beaten egg whites. Mix well. Add milk and then baking powder. Bake for 20-30 minutes at 200°C.
To make the icing, mix together icing sugar, butter and coffee, adding boiling water to make a smooth consistency.
When the cake is cool, cut in half and fill with whipped cream, then ice and sprinkle slivered almonds on top.
