Cream puffs

INGREDIENTS

1 cup water

85g butter

140g flour

1 tablespoon sugar

1/2 teaspoon vanilla essence

4 eggs

whipped cream, for filling

icing sugar, to serve

METHOD

Bring butter and water to the boil. Add flour and beat until the mixture leaves the sides of the saucepan. Remove from heat, then add sugar and vanilla essence. Add eggs one at a time and beat well after each addition. Place spoonfuls onto a greased oven tray and bake at 200°C for 30 minutes.

When the puffs are cold, split and fill them with fresh cream and dust with icing sugar.

TIP

The secret is to beat well. For a modern take on this traditional favourite, drizzle with melted chocolate.
