Dulcie’s famous Christmas pudding

Gran always made sure only the best quality dried fruit went into this mix, and she would put the pudding on to boil before she went to church early on Christmas morning. Several hours later, when it was finally served up, it was the supreme highlight of the year for us all, surpassing all the other goodies from Gran’s kitchen!
INGREDIENTS
5 large cups flour
900g sultanas
455g currants
455g raisins
42g lemon peel, finely chopped
455g suet
1 teaspoon salt
4 teaspoons baking powder
4 eggs
455g raw sugar
2 teaspoons vanilla
1 tablespoon golden syrup
2 cups milk
2 cups water
METHOD
Mix flour, fruit, suet, salt and baking powder. In another bowl, beat eggs and raw sugar, then add golden syrup and vanilla to eggs. Mix egg mixture into dry ingredients, adding milk and water at same time, mix well. Scald cloth and flour it. Put mixture into it and tie with room to swell. Boil fully immersed in water for 6-7 hours, adding boiling water as it steams away.
