Flo’s shortbread

INGREDIENTS
225g butter, at room temperature
1 cup icing sugar
1 1/2 cups cornflour
1 cup flour
pinch salt
METHOD
Beat butter and icing sugar together with electric beater until smooth. Fold in sifted flours and salt until combined. Roll into a log, then sit it in fridge for no more than 10 minutes. Cut into rounds. Place rounds onto greased oven tray and bake at 150°C for 30 minutes.
