INGREDIENTS
170g butter
170g sugar
3 eggs
170g flour
170g cornflour
1 1/2 teaspoons baking powder
raspberry jam
icing sugar
METHOD
Cream butter and sugar well, adding eggs one at a time. Add twice-sifted flours and baking powder. Put small, even spoonfuls onto greased baking trays.
Bake 8-10 minutes at 200°C. When they’re cold, sandwich pairs together with raspberry jam, and sprinkle with icing sugar.
