CAKE
INGREDIENTS
140g butter
55g sugar
2 egg yolks
280g flour
2 teaspoons baking powder
1/2 cup strawberry or raspberry jam
MERINGUE
115g sugar
2 egg whites
115g coconut
METHOD
To make the cake, cream butter and sugar, then add egg yolks and beat well. Stir in sifted flour and baking powder. Press mixture into greased tray. Spread jam over mixture.
To make the meringue, beat egg whites and sugar together until thick, then fold in coconut.
Spread the meringue on top of cake.
Bake at 180°C for 30 minutes. Cut into squares.
