INGREDIENTS
1.8kg fruit such as grapefruit and orange
1 lemon, rinded
12 cups water
3.6kg sugar
pinch salt
METHOD
Slice fruit extremely finely. Put in pot with rind and water and leave to soak overnight. Place on heat and bring to the boil then simmer until the fruit skin is very soft. Gradually add sugar and bring to the boil again. Boil only until the mixture sets when tested - this won’t take long.
Add salt before pouring into sterilised jars.
TIP
Do not be afraid to mix different fruits.
