Marshmallows

INGREDIENTS
1 1/2 cups caster sugar
2/3 cup hot water
2 tablespoons gelatine
1/2 cup cold water
1 teaspoon vanilla essence
red food colouring
cornflour, for dusting
METHOD
Grease 16.5cm x 26cm pan. Line with baking paper, allowing a 3cm overhang at both ends.
Combine sugar and hot water in saucepan, stir over medium heat for about 3 minutes or until sugar is dissolved. Using a fork, combine gelatine with cold water. Pour into hot sugar syrup and stir on medium heat until the mixture is clear and gelatine is dissolved. Pour into electric mixer bowl and set aside to cool (about 40 minutes).
Using a mixer, beat until very thick. Add vanilla and colouring, beat for another minute.
Spread into pan and smooth the top. Set aside at room temperature for approximately 1 hour.
Lift onto board, and cut into squares using a wet knife. Lightly dust with cornflour.
TIP
Spread the marshmallow on a cooked shortcake base to make marshmallow slice.
