Mint jelly

NGREDIENTS
8 tablespoons sugar
2 cups vinegar
1 packet lime jelly crystals
1/2 cup sherry
30 large mint leaves, chopped
METHOD
Heat vinegar, sugar and jelly crystals until sugar and crystals are dissolved. Add sherry and mint. Mix well. Seal in sterilised jars and place in fridge to set.
Give the jars a shake roughly every ½ hour, so that the mint is set floating in the jelly.
