Party cheese scones

TOPPING

INGREDIENTS

2 tablespoons butter, melted

3 tablespoons cheese, finely grated

pinch dry mustard

pinch cayenne pepper

1 egg

SCONES

2 cups flour

4 teaspoons baking powder

50g butter

1/2 cup cheese, grated

3/4 cup milk

METHOD

To make the topping, combine melted butter, mustard, cayenne pepper and cheese. Beat egg and add to cheese mixture. Set aside while preparing scones.

To make the scones, sift flour and baking powder, cut in butter to resemble breadcrumbs. Add cheese. Stir in enough milk to make stiff dough. Place dough on floured surface and gently press out into a slab about 1 inch thick. Spoon topping mixture over the dough, and cut into 18 small rounds.

Bake at 220°C for 12 minutes.
