Pikelets

INGREDIENTS

2 cups flour

pinch salt

1/2 cup caster sugar

3 eggs

4 tablespoons butter, melted

1/2 teaspoon vanilla essence

1 cup milk

2 heaped teaspoons baking powder

butter or cream, to serve

jam, to serve

METHOD

Sift flour, salt and sugar into a bowl. Make a well and drop in the eggs, melted butter and vanilla essence. Add milk slowly, mixing to a smooth but not sloppy consistency. Once mixed, stir in baking powder with fork.

Place tablespoonfuls into hot buttered pan, turning them when bubbles appear.

Make sure you wipe the pan with a cloth or paper towel after each lot of pikelets is cooked.

Serve with butter or cream and jam.

TIP

Use a heavy pan, preferably cast iron. Wiping the pan between each batch takes away any dirty burnt butter, keeping the pikelets golden.
