Pipi fritters

“We would gather pipis from the Manukau Harbour and barbeque them there and then on the beach. Sometimes there wouldn’t be any left to make fritters when we got home!” - Dulcie

INGREDIENTS

1/2 cup flour

1 teaspoon baking powder

salt and pepper

2 eggs, separated

1/4 cup chilled water

1 cup pipis, chopped

oil, for frying

METHOD

Mix flour, baking powder, salt and pepper in a bowl. In a separate bowl, whisk the egg yolks and water together, then gently add this to the dry ingredients. Fold pipis into mixture. Whisk egg whites and fold them in also.

Heat oil in pan and place spoonfuls of mixture to desired size in oil. Cook for 1 to 2 minutes each side or until cooked through. This depends on how thin you have made your fritters.
