Iced Oatmeal Cookies

2/3 cup sugar

3/4 cup brown sugar

1 cup butter, softened (or shortening)

2 eggs

2 tsp. vanilla

2 Tbsp. warm water

1 1/2 cup flour

1 tsp. baking soda

1 Tbsp. cinnamon

pinch of salt

3 cups quick oats

Cream sugars and butter, add eggs, vanilla, and water mixing until light and fluffy. Sift together dry ingredients and add to wet mixture, mixing until well incorporated. Drop by teaspoonful onto a greased cookie sheet. Bake in pre-heated 350 degree oven for 12 - 15 minutes. Cool completely and ice.

Vanilla Icing

1 1/2 cups confectioners' sugar

2 1/2 teaspoons milk

1/4 teaspoon vanilla extract

1 Tbsp. butter

Melt the butter and add to rest of ingredients. Mix until creamy.
